Stewart Laing and Tom Aitkens masterpiece and the result of many happy weeks and months spent in the warehouse cellars and the blending laboratory, the hop 25yo is the consummate after-dinner whisky in the range.
A perfectly judged combination of whiskies matured in ex-bourbon and ex-sherry casks, the 25yo begins with vanilla, orange and even marzipan before developing creamily on the palate with complex spices – cinnamon and ginger, followed by toffee and wonderfully aromatic oaky notes. Whiskies from Speyside such as Glenrothes and Dufftown along with a hint of Islay’s Caol ila along with the signature north British grain whisky are key elements to this.
Stewart and Tom agreed that the 25yo should be both drinkable and yet complex, allowing the connoisseur to spend time savouring and decoding its mystery. Best enjoyed after dinner or with dessert, it will work beautifully with a chocolate dessert – the marzipan and vanilla being a good match in that direction, and blended to stand up well to a good quality cigar, it offers the drinker an element of flexibility. One thing is beyond dispute, the 25 years old house of peers rewards those who take their time to enjoy it to the full.
